Fried breadsticks, also known as youtiao, origintated in coastal China and is rumored to be a food made for venting people’s anger with Qin Hui (秦檜), who killed the patriotic and heroic military general Yue Fei (岳飛) during the Southern Song dynasty. They curled two thin long sticks of dough, which represent the traitor Qin Hui and his wife, and then deep-fried them in a high-temperatured pot, as if by doing so, they could get even with the traitor for what he had done to hero and patriot Yue Fei. Later, dough sticks became very popular, and in China, Malaysia, Vietnam and Taiwan today, it is a commonly seen food. Of course, the patriotic meaning behind fried breadsticks has already faded away and, as far as Taiwanese people are concerned today, youtiao are an essential part of a traditional breakfast.
Because of the rich history and culture of Tainan, the diet of this city is quite different from other places in Taiwan. In Tainan, breakfast consists of either drinking a bowl of beef soup or eating steamed rice bowl cake (碗粿), whereas the Yonghe Soy Milk (永和豆漿) often found in other major cities in Tainan is difficult to find. Hundred Year Youtiao on Baoan Road (保安路) has a fantastic reputation, painstakingly built up over three generations. At this restaurant, which a few years ago moved from its original location on a small lane on Ximen Road, you can see the chef kneading and frying the dough for the breadsticks. The crispiness of the end result is much better than the cheap price of TWD15 suggests. Don’t miss out on Hundred Year Youtiao if you are in Tainan!
