On the Sanxia Old Street of New Taipei City, there is an inconspicuous eatery always packed with hungry locals and tourists alike. From the outside, it might look no different from any other noodle shop in town, but the sensation in your mouth will explain everything.
Serving up handmade mitaimu (silver needle noodles), Uncle Gu prides itself on adopting the most traditional method ever to make these al dente noodles. The refreshing broth simmered with pork bones, fried shrimps and dried flounders for two good hours is a perfect match with the noodles. Topped with a spoonful of tasty minced pork, with a pinch of pepper and celeries, this bowl of nostalgic goodness takes many Taiwanese back to their own childhood memories.
As the name suggests, Uncle Gu is the force behind this acclaimed eatery. A bit more than a decade ago, Uncle Gu was still a prestigious tailor on the Sanxia Old Street. However, with the structural transformation of the clothing industry in Taiwan, Uncle Gu decided to embark on a journey to Hsinchu to explore the gastronomic world of traditional Hakka cuisine. He therefore brought back to Sanxia the authentic taste of the old good times — mitaimu.
