After a long period of Japanese colonial rule, Japanese cuisine has left an indelible mark on the Taiwanese diet. This is especially true of desserts like mochi. Made out of glutinous rice, these small balls of mochi are chewy and soft, and generally have a sweet filling inside such as red bean paste. The art of mochi is a fine one: too elastic and it is unpleasant to eat, too hard and it is impossible to eat. Lucky that the Taiwanese have got it down to a tee. To please all palates, there are even different creative variations developed, including Hakka, Minnan and aboriginal styles.
