In the Yulin Township of Hualien, this inconspicuous but far from unknown stall opens its door and distributes numbered queue tickets to the hungry hordes at 4pm sharp. In merely half an hour, there are already a hundred or so patrons lining up for the yummilicious fermented snack.
Garnished with pickled radish and basil, each piece of tofu is deep fried in two flaming pots of oil with different temperatures. The first pot has a lower temperature in order to have the tofu cooked thoroughly, and the second one with a higher temperature will help get rid of the excess oil stuck in the crispy skin tofu, which has a crackling consistency surrounding the chewy, cakey goodness within. The stinky tofu might be a nasal assault, but you know what? Many foreigners come in here refusing to touch this infamous snack and then finding themselves pleasantly surprised at the taste.
