Bombing Egg Pancake

Scallion pancake (green onion pancake, or “chong you bing,” as we say in Chinese) is a deep-fried dough made from scallion and flour. It is lightly covered in a secret recipe soy sauce that has a hint of garlic, and a half cooked egg is hidden inside the dough. The name “bomb” here refers to the runny yolk of the uncooked eggs as the word “fried egg” sounds like “bomb” in Chinese.

Bombing Egg Pancake is a favorite of locals and tourists alike, so there is also a long queue even on weekdays. This famous roadside stall is located on Fuxing Street, where quite a few places for scallion pancake are also on the same street, so double check that you’re at the right spot (it’s a yellow food truck).
